Matilda Birago Kokofu
I am Matilda Birago Kokofu, an Environmental Science PhD candidate at the University of Ghana. My academic journey commenced with a Bachelor’s degree in Biochemistry, laying the foundation for my profound understanding of biological processes. Building upon this, I pursued a Master’s degree in Food Quality Management, honing my expertise in ensuring the safety and quality of food products, both degrees earned at the prestigious Kwame Nkrumah University of Science and Technology.
Currently, my professional journey unfolds at the forefront of the Quality Control Company Limited with the Ghana Cocoa Board (COCOBOD), a pivotal role where I specialize in mycotoxin analysis. My commitment to ensuring the safety of food aligns seamlessly with my previous role as a Technical Officer in the Seed Production Division. In this capacity, I oversaw the production and multiplication of hybrid cocoa planting materials, contributing to the sustainable growth of this vital agricultural sector.
My journey is not merely confined to laboratories and production fields; it extends to understanding and mitigating the impacts of climate change. With a background rooted in biochemistry, I present a unique perspective to exploring the intersection of climate change, food safety, and food security. My PhD pursuits are fuelled by a desire to unravel the intricate connections between environmental shifts and the safety of our food supply, a mission that resonates with my commitment to creating a resilient and sustainable future.
As I navigate the realms of academia and industry, my goal is to bridge the gap between scientific knowledge and practical solutions, addressing the pressing issues of our time. Through my journey, I strive to contribute meaningfully to the discourse surrounding climate change and its implications on the safety and security of our global food systems.
